SENSAI is inspired by Chef Rui Viegas gastronomic journeys and discoveries across Thailand, inviting guests on a sensory experience defined by bold flavours, vibrant aromas and contemporary interpretations of Asian cuisine.

Through his creative vision, the chef reimagines ingredients, techniques and distinctive cuts of meat encountered along the way, creating surprising dishes that blend authenticity, irreverence and emotion.

The experience is further elevated by Sushi Chef Fábio Terada, who leads the Omakase experience, where the precision of Japanese technique meets the exceptional freshness of Algarve seafood.
